Savoring The Summer With Savory

As the last few weeks of summer arrive we are taking the time to appreciate what this beautiful season has to offer. Today we take a look at the herb Savory found in our herb garden here at O’Hara.

Savory comes in two main varieties. Winter savory, which is a perennial with a piney taste to it and Summer savory, which is an annual that has a peppery taste.

Summer savory has small leaves and grows small white or lavender coloured flowers, while winter savory has darker leaves that are much thicker in texture and the plant is overall more woody.

Savory can be used as an aid for indigestion. Rubbing a sprig of it on an insect bite is said to provide instant relief. As an ointment it can also be used in the relief of rashes and other skin irritations.

Savory is often used in cooking. Combined with other herbs savory helps to bring flavours together. Summer savory especially is often used as a condiment on meats and vegetables, while the less sweet winter savory is often used to flavour liqueurs.
